INGREDIENTS

100g soba noodles (uncooked)
2½ cups of mixed leaf salad
½ cup corn kernels
¾ cup (100g) of firm tofu, cut into matchsticks
INGREDIENT FOR DRESSING
2 tablespoons light mayonnaise
1½ tablespoons rice wine vinegar
1 tablespoon reduced salt soy sauce
2 teaspoon sesame oil
Pepper to taste

TIPS:

  • For a chewy texture, swap soba noodles for sweet potato noodles (also known as ‘glass’ noodles) and cook according to packet instructions.

STEPS

Bring a pot of water to the boil. Add soba noodles to boiling water to cook for 4-5 minutes. Drain the soba noodles and rinse under cold water and set aside.

To make the dressing, add all dressing ingredients into a jar and shake well until combined.

Combine soba noodles and sesame dressing and mix well, until the soba noodles are coated in the dressing.

Toss through corn kernels, tofu and mixed salad leaves to serve.
