Easy Fried Rice

INGREDIENTS

2 tablespoons vegetable oil
2 garlic cloves, finely chopped
1 small onion, finely chopped
1 cup shredded cooked chicken
1 spring onion, finely chopped (optional)
1 1/2 cups diced, frozen vegetables,
2 cups cooked leftover white rice
2 eggs, lightly whisked

SAUCE INGREDIENTS:
1 tablespoon mirin
1 tablespoon oyster Sauce
1 tablespoon reduce salt light soy sauce

TIPS:

  • Using leftover rice from the fridge (rather than fresh cooked rice) gives fried rice a fluffier texture.
  • Swap mirin for Chinese cooking wine for a different flavour.

EQUIPMENTS

  • Small bowl
  • Wok or fry pan
  • Wok spatula or stirring spoon
  • Measuring spoons and cups

STEPS

Mix sauce ingredients and set aside

Heat 1 1/2 tablespoons oil in a fry pan or wok over a high heat.

Add onion, garlic, chicken and chilli if using for 1 minute.

Add frozen vegetables. Cook for 2 minutes over high heat

Add rice to the fry pan or wok and mix in sauce ingredients until well combined.

Push fried rice to one side of the pan Add 1/2 tablespoon oil into the cleared space.

Pour in eggs, then scramble until egg is cooked through.

Stir the egg through the rice and serve immediately with spring onion and/or chilli (optional)
