Easy Peanut Noodles

INGREDIENTS

1 packet of plain instant noodles (or noodles of your choice)
Half a bunch of broccolini (or broccoli)
1 chicken thigh cut into strips
1 tablespoons reduced salt soy sauce
1/2 tablespoon sesame oil
PEANUT SAUCE
1½ tablespoon peanut butter
1 tablespoons reduced salt soy sauce
2 teaspoon rice wine vinegar
1 teaspoon minced garlic
1 teaspoon sriracha (chilli) sauce
2 tablespoons hot water

TIPS:

  • You can check if the chicken is cooked by chopping it at the thickest part and checking if the meat is white. If it is still pink, keep cooking for longer.
  • When using instant noodles, throw away the flavour sachet or buy the plain instant noodles.

STEPS

Cut chicken thigh into strips, mix with 1 tablespoon of reduced salt soy sauce and ½ tablespoon sesame oil. Set aside to marinate.

Prepare noodles as per packet instructions. Drain noodles and set aside in a bowl.

Heat a fry pan with the oil over medium heat. Add chicken to the pan and cook for 3 minutes on each side or until fully cooked then set aside.

Cook broccolini by adding it to a pan of boiling water for 1 minute or in the microwave for 2 mins. Drain and set aside.

Combine all peanut sauce ingredients into a bowl and mix well.

Stir peanut sauce through noodles and top with chicken and broccolini.
