Cut chicken thigh into strips, mix with 1 tablespoon of reduced salt soy sauce and ½ tablespoon sesame oil. Set aside to marinate.
Prepare noodles as per packet instructions. Drain noodles and set aside in a bowl.
Heat a fry pan with the oil over medium heat. Add chicken to the pan and cook for 3 minutes on each side or until fully cooked then set aside.
Cook broccolini by adding it to a pan of boiling water for 1 minute or in the microwave for 2 mins. Drain and set aside.
Combine all peanut sauce ingredients into a bowl and mix well.
Stir peanut sauce through noodles and top with chicken and broccolini.
