INGREDIENTS

2 slices of multigrain or wholemeal bread
2 eggs
2 ½ tablespoons of milk
1 cup mixed leaf salad
1 teaspoon of curry powder (optional)
Salt and pepper to taste

TIPS:

  • You can freeze leftover bread so it stays fresh for next time.
  • For variety, try adding some chopped spring onion to the egg.

EQUIPMENTS

  • Microwave, microwave safe bowl and fork
  • Measuring spoons and cup

STEPS

Add eggs, milk and curry powder to a microwave safe bowl and beat well with a fork.

Place bowl in microwave and cook for 30-40 seconds on high power.

Remove bowl from microwave and stir eggs, and return to microwave for another 30-40 seconds. You may need to repeat this 2-3 times until eggs are cooked to your desired texture.

Add salt, pepper and curry powder to eggs to season.

Assemble your sandwich with the scrambled egg and mixed leaf salad.
